Chicken Fiesta holds grand opening at Midlothian location

Chicken Fiesta on Midlothian Turnpike

On Wednesday, March 11, 2020, Chicken Fiesta opened its doors to the public.  The much anticipated restaurant had been under construction since April, but is now ready to serve hungry guests.  Before renovation, Chicken Fiesta, replaced the former Pizza Hut across from Midlothian Middle School.

On opening day, the restaurant was filled with hungry guests who were on the search for Mexican cuisine.  One Chicken Fiesta employee stated that at the grand opening they had a lot of guests, and it was very busy.  Workers at Chicken Fiesta also stated that on their opening day, they were rushed with large crowds of excitement and hungry guests.  The establishment welcomes its guests with an open dining lounge with seating throughout. Many customers enjoy looking at walls filled with Spanish-related artwork and listening to the lively music throughout the restaurant. 

The restaurant offers several different food selections, such as: salads and burritos, but their most popular item is the rotisserie chicken, slowly rotated over an open flame while crisping in the brick oven. Customers can choose whether to buy a whole, half, or quarter chicken.  For dessert, Chicken Fiesta offers a one of a kind dish: fried ice cream. Many guests enjoy breaking into the waffle cone and eating the vanilla ice cream, drizzled with warm chocolate and cinnamon.

Freshman Camryn Turner, stated, “I typically get the rotisserie chicken with rice and a salad. The salad dressing is to die for!” Freshman Vincent Nadder shared, “My favorite food there is the rotisserie chicken.”. Chicken Fiesta is also equipped with a fully-functioning drive-through for customers looking to take a meal on the road.
